I always struggle to ensure my son is getting enough vegetables, so how do you ensure children eat the RIGHT amount?
As you can see from pictures on my blog my son and husband are pretty much twins. They have more in common than their looks, they both do NOT like vegetables… like at all. My husband is easier to trick than my son (if it has Caesar dressing my hubby is all in). My son Landon will bend sometimes and eat a fuss free vegetable but more often than not it is a fight. Healthy eating habits are important so it is a fight that I am willing to take on, but anything to make that easier is welcomed.
Insert smoothies. Every Sunday we make little smoothies for the family that taste great and hide the taste of the vegetables that are in them! We usually make 2 batches – one for Landon and one for a few breakfasts for Steve and I to enjoy. This week we did strawberry, banana, spinach and a little orange juice – see recipe below:
- 2 Handfuls for Spinach (I need to work on measurements – I know!!)
- 4 Bananas
- 14 Strawberries
- 1 Cup of Orange Juice
In the past we have substitute’s raspberries for strawberries or even add carrots or yummy squash into the mix!
We just got a vita-mix but in the past we used a regular blender and that worked just as well.
Landon thinks these are a treat – in reality it’s my way to ensure he gets vegetables every day! Of course I slip in some broccoli for dinner or salad as a snack – but I can never guarantee how much of those he will eat depending on temperament (and lets be real – how much sleep he has gotten on that particular day) – these are a guarantee 100% of the time. I eat them as well – healthy boost my day!
